To prepare reduction, in a medium saucepan, mix balsamic vinegar with brown sugar and bring to a boil over medium heat, stirring constantly. After sugar has dissolved, reduce heat to low and simmer until glaze is reduced by half, about 20 to 25 minutes. The glaze should coat the back of a spoon.
Cut tomatoes and mozzarella into 1/4-inch thick slices. Arrange tomato and mozzarella slices into stacks of alternating layers. Sprinkle julienned basil and sea salt over each stack. Drizzle olive oil and balsamic reduction over each stack and serve immediately.
